Next, Jim Cohen pedals across the U.S."},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><p>Jim Cohen\u2019s first goal after a debilitating stroke was to walk his daughter down the aisle at her wedding.<\/p>\n<div class=\"su-youtube su-u-responsive-media-yes\"><iframe loading=\"lazy\" width=\"600\" height=\"400\" src=\"https:\/\/www.youtube.com\/embed\/ElYQQreM-h4?autohide=2&amp;autoplay=0&amp;mute=0&amp;controls=1&amp;fs=1&amp;loop=0&amp;modestbranding=0&amp;rel=0&amp;showinfo=1&amp;theme=dark&amp;wmode=&amp;playsinline=0\" frameborder=\"0\" allowfullscreen allow=\"autoplay; encrypted-media; picture-in-picture\" title=\"\"><\/iframe><\/div>\n<p>As he lay in a hospital bed with locked-in syndrome at <a href=\"https:\/\/www.uchealth.org\/locations\/uchealth-university-of-colorado-hospital-uch\/\">UCHealth University of Colorado Hospital<\/a> after the <a href=\"https:\/\/www.uchealth.org\/today\/spirit-attitude-help-stroke-patient-battle-back-from-the-brink-at-uch\/\">September 2015 stroke<\/a>, he couldn\u2019t talk. But, focusing on one letter at a time with his eyes, he kept spelling out the word \u201cwedding.\u2019\u2019<\/p>\n<p>After months of tough work, Cohen, now 62, elicited tears from every guest when he stood up from his wheelchair, took his daughter Lexi\u2019s arm and walked her down the aisle at her wedding two summers ago.<\/p>\n<p>Now, Cohen, a world-class chef, who once appeared on Julia Child\u2019s show, has a new plan.<\/p>\n<p>He and a buddy want to ride across the country.<\/p>\n<figure id=\"attachment_15558\" aria-describedby=\"caption-attachment-15558\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-15558 size-large\" src=\"https:\/\/uchealth-wp-uploads.s3.amazonaws.com\/wp-content\/uploads\/sites\/6\/2018\/04\/27040852\/Jim-Cohen-restaurant-photo-sizes.webp\" alt=\"Jim Cohen, a stroke survivor who had locked-in syndrome, is recovering. Photo by UCHealth.<\/figcaption><\/figure>\n<p>You might be picturing two dudes in sunglasses on Harleys, like a remake of <em>Easy Rider<\/em>.<\/p>\n<p>Nah.<\/p>\n<p>Cohen plans to ride his tricycle. And his buddy might have to tow him part of the way or mount an engine to Cohen\u2019s trike.<\/p>\n<h3><strong>Getting even with a childhood pal<\/strong><\/h3>\n<p>The motivation for the trip is just as hilarious as the idea of two men on trikes pedaling through Iowa.<\/p>\n<p>Cohen\u2019s not planning to go to some glitzy place. He wants to ride to his hometown, Buffalo, New York \u00ad \u2013 1,635 miles from Denver \u2013 to prove a point. Now that he&#8217;s recovering from his stroke, he wants to pedal across the U.S. Photo by UCHealth.<\/figcaption><\/figure>\n<p>You see, back when Cohen suffered his stroke, he was \u201clocked-in,\u201d also known as locked-in syndrome, meaning he was totally immobile, couldn\u2019t speak, couldn\u2019t move, and, for a time, his tongue was stuck outside of his mouth with his teeth clamped down on it. Cohen had run fancy restaurants in Vail and around the country and trained with chefs around the world. An army of family and friends from various places raced to his hospital bedside.<\/p>\n<p>Levy was among them.<\/p>\n<p>\u201cWe did everything when we were young together. We went to school, walked neighborhoods and ran paper routes. He heard Levy say that maybe Cohen \u201cwould be better off dead.\u201d<\/p>\n<p>Cohen wanted to leap out of bed and punch Levy. But alas, he couldn\u2019t lift a finger.<\/p>\n<p>\u201cI thought to myself, \u2018I\u2019m going to show him,\u2019\u201d Cohen said. \u201cHe has inspired me.\u201d<\/p>\n<h3><strong>\u2018Locked in\u2019, but listening<\/strong><\/h3>\n<p>Little did friends know that Cohen found being locked in somewhat amusing.<\/p>\n<p>\u201cIt didn\u2019t scare me. I found humanity funny. People want to guess what you\u2019re thinking. Photo courtesy of Jim Cohen.<\/figcaption><\/figure>\n<p>And he drew from the strength and stamina that made him such a successful chef to fight his way back, stunning all of his doctors and rehabilitation therapists in the process.<\/p>\n<p>Before the stroke, Cohen had done a triathlon and had done 100-mile bicycle races before.<\/p>\n<p>Now that he\u2019s mobile again, he wants to ride all the way to Buffalo to tell off Levy in person.<\/p>\n<p>Actually, the two men are great pals, who rib each other regularly via email. Cohen just thinks the trike trip could be a great adventure.<\/p>\n<p>And, like all the road trips he and his wife, Connie, a fellow chef, took when their three kids were little, they\u2019d fuel up at all the interesting, little food shacks and diners along the way.<\/p>\n<h3><strong>From \u2018Type A\u2019 general to grateful teddy bear<\/strong><\/h3>\n<p>Levy was not alone in worrying about Cohen. At first, the outlook was grim. Friends and family feared Cohen would die. If he lived, they worried he might never speak again, would have little brain function and wouldn\u2019t be able to indulge his passion for cooking.<\/p>\n<p>They had no idea that Cohen\u2019s quick wit had survived the stroke until he started emphatically rolling his eyes whenever his sister-in-law, who always had driven him a little crazy \u2013 was at his side.<\/p>\n<p>\u201cOh yeah. He\u2019s in there,\u201d his wife realized.<\/p>\n<p>Then, he started communicating by using the eye gaze chart.<\/p>\n<p>\u201cThere\u2019s a lot of hope here,\u201d said <a href=\"https:\/\/www.uchealth.org\/provider\/william-niehaus-md-physical-medicine-and-rehabilitation\/\">Dr. William Niehaus<\/a>, a UCHealth physical medicine and rehabilitation specialist, who worked with Cohen soon after the stroke and during his stroke recovery.<\/p>\n<p>Niehaus was right to be optimistic.<\/p>\n<p>Eventually, Cohen emerged from locked-in syndrome and began moving his body, first on the left side, then many months later, on the right.<\/p>\n<p>Now, after nearly three years and considerable work, Cohen is thriving. Yes, he\u2019s deaf in his right ear, blind in his left eye, talks with a gravelly voice and can\u2019t work as a full-time chef. But, he and his family still own the <a href=\"http:\/\/www.theempirerestaurant.com\/#the-empire\" target=\"_blank\" rel=\"noopener noreferrer\">Empire Lounge and Restaurant in Louisville<\/a>, Cohen still whips up his favorite meals for family and friends, and once a proud \u201cType A\u201d order barker, he\u2019s now more of a teddy bear grandpa who marvels at the kindness all around him.<\/p>\n<h3><strong>\u2018My greatest discovery\u2019<\/strong><\/h3>\n<p>Following the stroke, Cohen and his family moved from Boulder to Englewood. He lives close to <a href=\"https:\/\/craighospital.org\/\" target=\"_blank\" rel=\"noopener noreferrer\">Craig Hospital<\/a>, where his UCHealth doctors sent him for rehabilitation after his initial stay at University of Colorado Hospital.<\/p>\n<figure id=\"attachment_15556\" aria-describedby=\"caption-attachment-15556\" style=\"width: 150px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-15556 size-thumbnail\" src=\"https:\/\/uchealth-wp-uploads.s3.amazonaws.com\/wp-content\/uploads\/sites\/6\/2018\/04\/27040839\/Jim-Cohen-meatball-photo-sized.webp\" alt=\"A photo of Jim Cohen's meatballs in a cast iron pan.\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-15556\" class=\"wp-caption-text\">Jim Cohen&#8217;s signature meatballs.<\/figcaption><\/figure>\n<div class=\"su-callout-box col-xs-6 col-sm-6 right\" style=\"background-color:#dce4e7; color:#2e3b44;\">\n<h4><strong>Jim Cohen&#8217;s signature meatballs<\/strong><\/h4>\n<p><strong>Pasta<\/strong><\/p>\n<p>1\/4 pound bucatini &#8211; blanched 5 minutes and coated with olive oil<\/p>\n<p>5 \u00a0pork meatballs, warm in stock<\/p>\n<p>2 ounces tomato sauce<\/p>\n<p>1 teaspoon sliced garlic<\/p>\n<p>1\/4 cup olive oil<\/p>\n<p>salt and fresh black pepper<\/p>\n<p>4-5 basil leaves, torn<\/p>\n<p>1 ounce ricotta salata<\/p>\n<ol>\n<li>Heat 1\/2 the olive oil add garlic, until lightly golden.<\/li>\n<li>add tomato sauce<\/li>\n<li>heat precooked pasta for 3 minutes in pasta cooker<\/li>\n<li>add to sauce cook a couple more minute add meatballs<\/li>\n<li>season and drizzle a little more olive oil<\/li>\n<li>put in bowl garnish with basil and ricotta salata<\/li>\n<\/ol>\n<p><strong>Pork Ricotta Meatballs<\/strong><\/p>\n<p>1\/2 pound pork shoulder, finely ground in a meat grinder<\/p>\n<p>1 cup plus 2 tablespoons ricotta cheese, drained for 1 hour<\/p>\n<p>1 egg, beaten<\/p>\n<p>1\/2 cup freshly grated Parmigiano-Reggiano<\/p>\n<p>A few gratings nutmeg<\/p>\n<p>Salt and black pepper, to taste<\/p>\n<p>Flour, for dusting<\/p>\n<p>1 cup extra virgin olive oil, for frying<\/p>\n<p>2 cups basic tomato sauce, recipe follows<\/p>\n<p>Basil leaves, for garnish<\/p>\n<ol>\n<li>In the bowl of a food processor, combine the veal, cheese, egg, Parmigiano, nutmeg, salt and pepper. When the mixture is well-blended, shape it into several balls 1-inch diameter.<\/li>\n<li>Lightly dust each ball with the flour.<\/li>\n<li>In a large, heavy-bottomed skillet with fairly high sides, heat the oil over high heat until just smoking. Add the balls, a few at a time, and cook until they are uniformly golden brown.<\/li>\n<li>Remove with a spider or slotted spoon and keep warm while the remaining meatballs are cooked.<\/li>\n<\/ol>\n<p><strong><u>Tomato Sauce<\/u><\/strong><\/p>\n<p>1 28-ounce can Italian plum tomatoes<\/p>\n<p>2 \u00a0onions chopped<\/p>\n<p>1 carrot<\/p>\n<p>1 celery<\/p>\n<p>1 sprig rosemary<\/p>\n<p>salt and pepper<\/p>\n<p>1\/4 cup olive oil<\/p>\n<ol>\n<li>saut\u00e9 onion in olive oil until translucent<\/li>\n<li>tie celery, carrot and rosemary together<\/li>\n<li>add tomatoes to onion, put carrot and celery in tomatoes<\/li>\n<li>cook fro 1 1\/2 hours at a simmer<\/li>\n<li>remove celery from sauce and pass through food mill.<\/li>\n<\/ol>\n<\/div>\n<p>Twice a week, Cohen cruises over from his apartment in his motorized wheelchair to Craig for physical therapy sessions. He also does most of the grocery shopping and cooking for his family by crossing busy Hampden Avenue with his trusty service dog, Stark, at his side. He loves the convenience of being able to get where he needs to go without needing to get rides. (Because the stroke robbed him of vision in one eye, he can no longer drive.)<\/p>\n<p>Twice, Cohen has had little accidents when his wheelchair hit a rock or a curb and he tipped over in the road. Instead of being angry, he found himself in awe as multiple strangers helped him.<\/p>\n<p>\u201cIt\u2019s amazing. So many people stopped,\u201d he said.<\/p>\n<p>\u201cI think that\u2019s my greatest discovery. If you watch the news, you think the world is such a horrible place,\u201d Cohen said. \u201cBut I have found people to be very generous and caring. My friends and family have stepped up. I am nicely surprised.\u201d<\/p>\n<p>He also gets a kick out of simple things, like Stark. A Labradoodle, he was trained initially to help a family with an autistic child. But Stark was rejected. Military veterans seemed more interested in macho dogs, not a curly, blond Labradoodle. Cohen had to train Stark to get used to his wheelchair and the recumbent bike, but he\u2019s become a great pal.<\/p>\n<p>\u201cHe picks things up. He takes clothes out of the dryer and he makes me laugh,\u201d Cohen said.<\/p>\n<p>Cohen also has eased his rules on cooking. For one of his favorite recipes, he always started with whole chickens. He used to be able to break them apart and debone them in minutes. The last time he tried, it took about an hour to do one. So now, Cohen cheats like other busy cooks. He has an Instapot that he loves. He buys pre-washed lettuce. And he just discovered peeled garlic.<\/p>\n<p>\u201cMy favorite things to make right now are soups and stocks,&#8221; Cohen said.<\/p>\n<p>While he\u2019s eased up on ingredients, he has not compromised at all on taste. After his initial stay at Craig Hospital, Cohen then spent more than three months at a rehabilitation center in Nebraska. He found the food terrible, so he started teaching all the employees and residents how to cook.<\/p>\n<p>Cohen loves his neighborhood grocery store, where everybody knows him and Stark.<\/p>\n<h3><strong>Back from the dead<\/strong><\/h3>\n<p>Back when he was a chef, working in high-stress kitchens, where everything had to be perfect, Cohen concedes he was \u201ca pain in the a**.\u201d<\/p>\n<p>When he had the stroke, he was visiting his brother in Aspen. He woke up that morning, paralyzed but conscious, and knew he needed help, but couldn\u2019t get anyone\u2019s attention for hours. As soon as his brother discovered him, he called 911 and got Cohen help. Every second counts when it comes to strokes. Cohen thinks he actually died temporarily during his stay in the ICU.<\/p>\n<p>\u201cI saw my grandmother and a woman who was their cleaning lady standing behind me,\u201d he said.<\/p>\n<p>Why the cleaning lady? Who knows? Photo courtesy of Jim Cohen.<\/figcaption><\/figure>\n<p>Somehow, Cohen clawed his way back. And now, life is smiling on him.<\/p>\n<p>His daughter has had a baby, the family\u2019s first grandchild. Beverly \u201cEvvy\u201d Scott is nearly 3 months old now. And Cohen can tell she\u2019s going to be smart.<\/p>\n<p>\u201cHer father\u2019s a rocket scientist, so he\u2019s training her to be a rocket scientist,\u201d Cohen said with a wry grin.<\/p>\n<p>Little Evvy has reinforced Cohen\u2019s notion that he has many reasons to live.<\/p>\n<p>\u201cWhen I hold her, I get a lot of smiles.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Jim Cohen\u2019s first goal after a debilitating stroke was to walk his daughter down the aisle at her wedding.
