Un adobo a base de sal (que a veces se denomina \u201csalmuera seca\u201d) simplemente extrae m\u00e1s humedad de la carne.<\/p>\n<p>Pero el verdadero desaf\u00edo proviene en elegir el corte de carne de res adecuado para aplicar calor seco o h\u00famedo. Los cortes de carne como el tenderloin no son adecuados para asados de olla; del mismo modo, colocar directamente a la parrilla un thick eye of round es un error costoso.<\/p>\n<p>Pero \u00bfc\u00f3mo seleccionar correctamente cuando los carniceros utilizan tantos nombres diferentes, verdaderamente una abrumadora variedad, para los cortes de carne de res? Muchos de esos llamados cortes de carnicero estaban demasiado relacionados con (y a menudo, de hecho, formaban parte de) secciones m\u00e1s grandes y menos deseables de la carne de res, como el hombro o el diafragma.<\/p>\n<p>\u201cUno de esos cortes de carnicero\u201d, se\u00f1ala Brunson, \u201cel tri-tip, proviene del sirloin, al igual que sirloin cap\u201d (esta \u00faltima a menudo encontrada en mercados latinos como \u201cpicanha,\u201d \u201cpica\u00f1a\u201d o \u201cbistec de palomilla\u201d). Puede solicitarle a su carnicero que los nombre de esta manera, o encontrarlos en la vitrina bajo alguno de sus sin\u00f3nimos u otros nombres: boneless top chuck steak, oyster blade steak, book steak, butler steak, lifter steak, chuck clod, petite steak, triangle steak, shoulder top blade steak o boneless top blade steak. (Es importante se\u00f1alar que un flat iron no es, sin embargo, uno de estos nombres, ya que todos son cortes de carne de res diferentes: hangar, flank o skirt steak).<\/p>\n<p>Algunos dicen que el filete flat iron es el segundo corte de carne de res m\u00e1s tierno despu\u00e9s del filet mignon. Por lo tanto, es lamentablemente subestimado y, a menudo, econ\u00f3mico. Debido a que proviene del corte primario del animal llamado chuck, tiene una intensidad de sabor m\u00e1s intenso que el filet mignon, m\u00e1s parecida a la de un New York strip. Es un cumplido que cualquier amante del asado de res apreciar\u00e1.<\/p>\n<h2><strong>Filete flat iron a la parrilla<\/strong><\/h2>\n<p>Rinde 2 porciones.<\/p>\n<h3><strong>Ingredientes<\/strong><\/h3>\n<p>2 filetes flat iron, cada uno de 1 1\/2 pulgadas de grosor, con un peso total de cada uno dependiendo de su apetito.<\/p>\n<p>Condimentos a su elecci\u00f3n (sal kosher y pimienta negra reci\u00e9n molida; mezcla de especias para steak seco o condimento; marinado)<\/p>\n<h3><strong>Instrucciones<\/strong><\/h3>\n<p>Para ambos m\u00e9todos de cocci\u00f3n y para asegurar temperaturas finales adecuadas, los filetes deben estar descongelados y a temperatura ambiente (fuera del refrigerador y sobre la encimera durante 30-40 minutos antes de cocinar). Sazone los filetes, si as\u00ed lo desea.<\/p>\n<p>Para asar a la parrilla: en carb\u00f3n, tener secciones tanto calientes como medianamente calientes en la parrilla. Colocar los filetes sobre la secci\u00f3n m\u00e1s caliente primero, sellando ambos lados durante 2 minutos por lado. Luego, moverlos a la parte menos caliente de la parrilla y cocinar hasta alcanzar una temperatura interna de 130 grados para un punto medio (12-14 minutos). En gas, precalentar a temperatura alta, luego proceder como con el carb\u00f3n, bajando el calor a medio despu\u00e9s del sellado de 2 minutos.<\/p>\n<p>Para sellar en una sart\u00e9n sobre la estufa: Calentar una sart\u00e9n pesada o de hierro fundido a fuego alto durante 5 minutos, o hasta que est\u00e9 muy caliente. A\u00f1adir 1-2 cucharadas de aceite vegetal (como aceite de canola, aguacate o soja; sin embargo, no aceite de oliva ni mantequilla) y agregar inmediatamente los filetes a la sart\u00e9n. Cocinar hasta alcanzar una temperatura interna de 130 grados para un punto medio (13-15 minutos).<\/p>\n<p>Para ambos m\u00e9todos de cocci\u00f3n, retirar los filetes del fuego y dejarlos reposar sobre una encimera, una tabla de cortar o un plato calentado durante 5 minutos antes de servir, cubiertos muy ligeramente con papel aluminio.
