Foto: Getty Images.<\/figcaption><\/figure>\n<p>\u00bfQu\u00e9 pasa si usted no bebe alcohol y la lista de ingredientes de la receta de <em>coq au vin<\/em> (pollo braseado en vino tinto, plato emblem\u00e1tico de la gastronom\u00eda francesa) incluye 1\/4 de taza de brandy y 1\/2 botella de vino tinto? \u00bfO en la receta del risotto dice &#8220;A\u00f1adir un vaso de vino blanco seco&#8221;? \u00bfO para preparar la masa de un aut\u00e9ntico fish and chips (pescado y papitas), necesitar\u00e1 una botella de cerveza?<\/p>\n<p>Mucha gente no bebe alcohol por motivos de salud, religi\u00f3n, cultura o porque no quieren darle la salsa de <em>coq au vin<\/em> al beb\u00e9.<\/p>\n<p>As\u00ed como yo sol\u00eda encontrar muchos ingredientes en la cocina no occidental que no solo estaban fuera de mi alcance, sino que tambi\u00e9n estaban fuera de mi despensa, sospecho que a muchos cocineros les resulta dif\u00edcil usar vino, cerveza, licores o aguardientes para preparar muchas preparaciones occidentales.<\/p>\n<p>As\u00ed que, lamentablemente, simplemente evitan cocinar de esa manera.<\/p>\n<p>Conozco a veganos o vegetarianos que blanquean la carne \u2014para usar un t\u00e9rmino culinario con un segundo significado\u2014 si descubren que una cuchara o esp\u00e1tula al preparar su comida apenas toc\u00f3 un poco de carne. Respeto su blanqueamiento.<\/p>\n<p>Se suele suponer que el calor de la cocci\u00f3n elimina el alcohol de un plato. Eso es solo parcialmente cierto.<\/p>\n<p>De acuerdo con el Servicio de Investigaciones sobre Agricultura del <a href=\"https:\/\/www.usda.gov\/\" target=\"_blank\" rel=\"noopener noreferrer\">Departmento of Agricultura de los Estados Unidos,<\/a>\u00a0el 75 % del volumen de alcohol original del l\u00edquido utilizado se conservar\u00e1 en un postre flambeado; el 25 % en un plato que se haya cocinado a fuego lento o estofado durante una hora; y el 5 % en el mismo plato despu\u00e9s de dos horas y media. (Estos porcentajes para el estofado se garantizan si la olla se ha tapado durante la cocci\u00f3n, lo habitual).<\/p>\n<p>Esos n\u00fameros no funcionar\u00e1n para mucha gente.<\/p>\n<p>Llevo meses preparando muchas recetas, sustituyendo las mismas cantidades de cerveza o vino, tanto tinto como blanco, por l\u00edquidos completamente sin alcohol. (No suelo cocinar mucho con licores, as\u00ed que, por ejemplo, no he tenido que preparar un espresso para sustituir &#8220;2 cucharaditas de Kahl\u00faa&#8221;).<\/p>\n<p>Salvo alguna peque\u00f1a preocupaci\u00f3n ocasional por ajustar una receta para a\u00f1adir m\u00e1s dulzor a los l\u00edquidos que he usado, las sustituciones han funcionado de maravilla. Contrarresto el az\u00facar a\u00f1adido, principalmente por el sabor, con un poco de acidez (un chorrito de zumo de lim\u00f3n o un chorrito de vinagre de arroz).<div class=\"su-pullquote su-pullquote-align-right\">La verdad sobre el alcohol: <a href=\"https:\/\/www.uchealth.org\/today\/es-la-verdad-sobre-el-alcohol-es-saludable\/\">\u00bfEs saludable?<\/a><\/div>\n<p>Estas pr\u00e1cticas de cocina me han ayudado a reflexionar sobre el papel que desempe\u00f1a el vino o la cerveza en una receta original. Aportaba sabor, por supuesto, pero tambi\u00e9n la important\u00edsima frescura de la acidez o carbonataci\u00f3n afrutada. As\u00ed que busqu\u00e9 zumos de frutas u otras bebidas que imitaran esas mismas cualidades.<\/p>\n<p>En internet usted puede encontrar muchas tablas sobre sustitutos de l\u00edquidos sin alcohol en la cocina. No los he probado todos, pero les contar\u00e9 lo que me ha funcionado bien en la cocina despu\u00e9s de usar distintos tipos de jugos o l\u00edquidos.<\/p>\n<p>Para sustituir el vino tinto: Taza a taza, uso el jugo &#8220;Just Tart Cherry&#8221; de R. W. Knudsen. Es un excelente sustituto de los vinos tintos, y nadie en mi mesa, a quien le haya preparado un <em>boeuf bourguignon<\/em> (estofado de carne cocinado en vino tinto de Borgo\u00f1a<em>) <\/em>o un estofado de rabo de buey, podr\u00eda adivinar que no us\u00e9 vino tinto.<\/p>\n<p>Para sustituir el vino blanco: Igualmente, he tenido mucha suerte con el jugo de manzana &#8220;light&#8221; (con menos az\u00facar), por ejemplo, el Mott&#8217;s &#8220;For Tots&#8221;, o, si no queda m\u00e1s remedio, con el jugo de manzana normal. Es bastante curioso c\u00f3mo el jugo de manzana fr\u00edo huele igual que un riesling del Mosela, \u00bfo es al rev\u00e9s?<\/p>\n<p>Para sustituir la cerveza: A\u00f1ada una cucharadita de leche malteada en polvo a un jugo de manzana con gas o a una ginger ale baja en az\u00facar y jurar\u00e1n que est\u00e1n en la tierra de la cerveza.<\/p>\n<p>La receta de hoy es de mi madre, quien a su vez la aprendi\u00f3 del chef Claude Peyrot, propietario del restaurante <em>Le Vivarois<\/em> en Par\u00eds. Ella asisti\u00f3 a una clase de cocina con \u00e9l all\u00ed en los a\u00f1os 80.<\/p>\n<p>La receta original requiere estofar la carne en un vino tinto de Borgo\u00f1a, Gevrey-Chambertin.<\/p>\n<h2><strong>Estofado de rabo de buey<\/strong><\/h2>\n<p>Adaptado de \u201c<em>Queue de Boeuf<\/em>\u201d, Claude Peyrot, <em>Le Vivarois<\/em>, Par\u00eds<br \/>\nSirve 4 porciones.<\/p>\n<h3><strong>Ingredientes<\/strong><\/h3>\n<ul>\n<li>8-10 piezas de rabo de buey<\/li>\n<li>Mantequilla clarificada o ghee para dorar (un tipo de mantequilla clarificada, se le ha eliminado el agua y los s\u00f3lidos l\u00e1cteos )<\/li>\n<li>2 zanahorias peladas y picadas<\/li>\n<li>2 chalotas finamente picadas (familia de la cebolla)<\/li>\n<li>1 cebolla peque\u00f1a finamente picada<\/li>\n<li>2 tallos de apio picados<\/li>\n<li>1 diente de ajo finamente picado<\/li>\n<li>1 bouquet garni (ramitas de perejil y tomillo, y 1 hoja de laurel, atadas con hilo de cocina)<\/li>\n<li>1\/2 taza de caldo de ternera o de pollo<\/li>\n<li>Zumo embotellado \u201cJust Tart Cherry\u201d de R. W. Knudsen<\/li>\n<li>4 cucharadas de mantequilla sin sal, a temperatura ambiente<\/li>\n<li>Sal y pimienta negra reci\u00e9n molida al gusto<\/li>\n<\/ul>\n<h3><strong>Preparaci\u00f3n:<\/strong><\/h3>\n<p>Dore los trozos de rabo de buey en la mantequilla clarificada o ghee. Reserve. En la misma sart\u00e9n, dore ligeramente las verduras cortadas, incluyendo el ajo, a\u00f1adiendo un poco de mantequilla si es necesario. Vuelva a colocar el rabo de buey en la sart\u00e9n, si es posible en una sola capa, y a\u00f1ada el ramillete de hierbas. Vierta el caldo de ternera o pollo y el jugo de cereza hasta cubrir apenas la carne.<\/p>\n<p>Cubra la sart\u00e9n y cocine a fuego lento en un horno a 300 grados Fahrenheit durante 3 horas y media, volteando la carne una vez o hasta que est\u00e9 muy tierna y empiece a desprenderse del hueso. Para servir, retire la carne a una fuente caliente y cuele el jugo de la sart\u00e9n. Reduzca el jugo a la mitad y ligue la mezcla batiendo con las 4 cucharadas de mantequilla.
