Tome una manta o colchita y disfrute de una comida reconfortante y saludable.<\/p>\n<h2><strong>Sopa vegana tailandesa de calabaza<\/strong><\/h2>\n<h3><strong>Ingredientes<\/strong><\/h3>\n<p>2 cucharadas de aceite de coco<\/p>\n<p>2 calabazas butternut grandes (o 4 tazas), peladas, sin semillas y cortadas en trozos de 2,5 cm<\/p>\n<p>1 cebolla amarilla, picada<\/p>\n<p>4 dientes de ajo, picados<\/p>\n<p>2 a 3 cucharadas de jengibre fresco, rallado<\/p>\n<p>3 cucharadas de pasta de curry rojo tailand\u00e9s<\/p>\n<p>1 cucharada de az\u00facar morena<\/p>\n<p>1 cucharada de c\u00farcuma<\/p>\n<p>1\/4 de cucharada de cilantro en polvo<\/p>\n<p>1 cucharada de jugo de lima y cuatro rodajas reservadas para servir<\/p>\n<p>4 a 5 tazas de caldo de verduras (seg\u00fan el espesor deseado)<\/p>\n<p>1 lata de leche de coco (no light), refrigerada<\/p>\n<p>Un pu\u00f1ado de hojas de cilantro o albahaca tailandesa, picadas para decorar<\/p>\n<h3><strong>Preparaci\u00f3n<\/strong><\/h3>\n<p>Caliente el aceite en una olla grande de hierro fundido o en una cacerola de fondo grueso a fuego medio.
