Y su variedad es casi infinita. (El az\u00facar de d\u00e1til\u00a0se obtiene del fruto entero del d\u00e1til)<em>.<\/em><\/p>\n<p>Una de las maneras m\u00e1s efectivas de preparar recetas m\u00e1s saludables es elegir el aceite adecuado.<\/p>\n<p>\u201cUsar aceite de aguacate en lugar de manteca y reducir el az\u00facar y la sal hace que esta salsa sin gluten sea rica y equilibrada, perfecta para acompa\u00f1ar pollo o pavo al horno o asado\u201d.<\/p>\n<h2><strong>Mole poblano<\/strong><\/h2>\n<h3><strong>Ingredientes:<\/strong><\/h3>\n<ul>\n<li>6 tomatillos, lavados y sin c\u00e1scara<\/li>\n<li>5 chiles anchos<\/li>\n<li>5 chiles mulatos<\/li>\n<li>10 chiles guajillo<\/li>\n<li>\u00bd cabeza de ajo (unos 6 dientes)<\/li>\n<li>1 trozo de canela en rama de 2.5 cm<\/li>\n<li>\u00bc de cucharadita de clavo\u00a0 de olor molido<\/li>\n<li>2-3 tazas de caldo de pollo bajo en sodio, dividido<\/li>\n<li>\u00bd taza de az\u00facar de d\u00e1til<\/li>\n<li>1 tableta de chocolate mexicano de alta calidad (como Taza o Hern\u00e1n)<\/li>\n<li>1 cucharadita de sal, o m\u00e1s al gusto<\/li>\n<li>\u00bc de cucharadita de pimienta negra molida<\/li>\n<li>2 cucharadas de aceite de aguacate<\/li>\n<li>Opcional: \u00bc de taza de semillas de s\u00e9samo tostadas para decorar<\/li>\n<li>Pollo o pavo al horno o asado<\/li>\n<\/ul>\n<p>(Debido a que algunos de los chiles necesarios para esta receta son menos comunes que las variedades est\u00e1ndar, es posible que deba buscarlos en tiendas de comestibles que importan productos mexicanos, en supermercados o en pasillos de productos latinoamericanos, o en tiendas especializadas en especias).<\/p>\n<h3><strong>Preparaci\u00f3n:<\/strong><\/h3>\n<p>Ponga a hervir una olla peque\u00f1a con agua. Agregar los tomatillos y coc\u00ednelos hasta que adquieran un color verde p\u00e1lido y est\u00e9n tiernos, pero sin deshacerse. Esc\u00farralos y res\u00e9rvelos.<\/p>\n<p>Caliente un comal o una sart\u00e9n de fondo grueso a fuego lento. Tueste los chiles por todos lados hasta que desprendan aroma, volte\u00e1ndolos con frecuencia para evitar que se quemen. Res\u00e9rvelos.<\/p>\n<p>Ponga a asar los dientes de ajo (con c\u00e1scara) hasta que est\u00e9n ligeramente dorados por todos lados.<\/p>\n<p>Agregar 2 tazas de caldo de pollo, los tomatillos cocidos, el ajo, los chiles tostados, la rama de canela, el clavo de olor molido, la sal y la pimienta a una licuadora. Lic\u00fae hasta obtener una salsa suave. Cuele la salsa con un colador de malla fina.<\/p>\n<p>Caliente el aceite en una olla grande a fuego medio. Cuando est\u00e9 caliente, vierta con cuidado la salsa licuada. Agregar m\u00e1s caldo hasta obtener una consistencia espesa pero fluida. Incorpore el az\u00facar de d\u00e1til y el chocolate mexicano y revuelva hasta que se disuelvan.<\/p>\n<p>Cocine la salsa a fuego lento durante 15 a 20 minutos, revolviendo ocasionalmente.
